Easy Homemade Rustic Celery Soup Recipe

Step.1
Melt the butter in a Dutch oven or heavy stock pot over medium-high heat and cook the onions & celery until soft and translucent.
, we’re omitting adding salt here…. because the chicken stock will bring saltiness. You can adjust seasoning at the end if you need to but I’m guessing it’ll be just right!

add in crushed garlic and wait another minute. Powder over the flour on the entire mixture and stir until combined- wait one more minute.

Add the chicken broth/stock and milk/cream (if using dairy)and stir until the mixture is combined and velvety.

Step 4.
Increase the heat and bring to an almost a boil then reduce to a low heat- simmer, uncovered, for 15 minutes.
Taste test then Add salt & pepper to your liking.
