Egg Whites only- Egg Bites Recipe

Ingredients:

  • 6 egg whites
  • 1/2 cup cottage cheese (or other mix-ins see below)
  • 1 cup chopped vegetables (such as spinach, bell peppers, zucchini or other see below 🙂
  • Salt and pepper to taste
  • Non-stick cooking spray or oil for greasing

Instructions:
1 Preheat the Oven: Set your oven to 350°F (175°C).
2 Prepare Muffin Tin: Grease a silicone muffin tin or a regular muffin tin with non-stick spray.
3 Mix Ingredients: In a bowl, whisk together the egg whites, cottage cheese, chopped vegetables, salt, and pepper until well combined.
4 Fill Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
5 Bake: Place in the oven and bake for about 20-25 minutes or until the egg bites are set and slightly golden on top.
