Description

Is there anything better than a heart-warming, soul-touching, hot bowl of soup? YES—yes, there is. A bowl of soup that not only warms you from the inside out but also tantalizes your taste buds with every spoonfull AND can be whipped up in under 20 minutes!!! It's a feast for the senses, easy on the wallet, & totally doable in under 30 minutes, prep time included!

Ingredients
  • 1/4 cup butter
  • 1 whole small yellow onion (finely chopped - about 1 cup)
  • 2 cups very finley chopped (about 5 large ribs, organic recommended for optimal flavour)
  • 1 whole clove of garlic  (finely minced)
  • 1/3 cup all-purpose flour (unbleached)
  • 1 1/2 cups chicken broth or stock (of good quality)
  • 1 1/2 cups whole milk (or use 3/4 cup milk and 3/4 cup cream for even tastier results)
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/8 tspn black pepper (freshly ground)
Instructions
  1. Step.1

    Melt the butter in a Dutch oven or heavy stock pot over medium-high heat and cook the onions & celery until soft and translucent.

    , we’re omitting adding salt here…. because the chicken stock will bring saltiness. You can adjust seasoning at the end if you need to but I’m guessing it’ll be just right!
  2. Step. 2add in crushed garlic and wait another minute. Powder over the flour on the entire mixture and stir until combined- wait one more minute.
  3. Step. 3Add the chicken broth/stock and milk/cream (if using dairy)and stir until the mixture is combined and velvety.
  4. Step 4.

    Increase the heat and bring to an almost a boil then reduce to a low heat- simmer, uncovered, for 15 minutes.

    Taste test then Add salt & pepper to your liking.
